What's for Dinner? - Monthly Meal Plan

This quotes definitely applies to my meal planning! I don't mind grocery shopping or cooking, but for some reason, I put off making a weekly meal plan. All too often, I end up scrambling at the dinner hour.

I tease my kiddos by saying, "Are you hungry again? Didn't I feed you yesterday?" Having healthy and easy meals on a consistent basis is a real challenge for me.

As we enter another school year, one of my goals is to have a better plan for meals, so that I'm scrambling less and enjoying our evening family time together more. Many years ago, I made a monthly meal plan, and it worked beautifully - so I'm doing that again this year.

Here's what I did:

1. Asked hubby and kiddos what meals are their favorites that I have saladmade in the past. I was surprised by some of their answers - things that I hadn't made in years.

2. After I had a good sized list of meals, I plotted them out on a calendar for a whole month. I ended up making each night of the week a different theme, but changing the meal each week.  For example:

Mondays - Mexican (tacos, enchiladas, taco ring, etc.)

Tuesdays - Chicken (grilled, baked, roasted whole chicken, etc.)

Wednesdays - crockpot (We have co-op on Wednesdays, and it is so nice to come home tired and smell dinner cooking!)

Thursdays - pasta (carbo loading for my football guy's game on Fridays)

Fridays - For the fall, we have football games each Friday night, so this is just sandwich night or pizza after the games.

Saturdays - grill

Sundays - left-overs or sandwiches

These are just some ideas to get you started. I'm excited that I have a whole month of a plan ahead of me as we are adjusting to getting back into school.
