What's for Dinner? - Sweet Potato and Sausage Stew

Warm and healthy Fall food!

Sweet Potato and Sausage Stew


1# smoked turkey sausage link

2 small sweet potatoes, peeled and cut into 1/2" pieces (2cups)

1 medium green pepper, cut into 1" pieces (3/4 cup)

1 stalk celery, cut into 1/2" pieces (1/2 cup)

1/2 cup chopped onion

2 tablespoons quick-cooking tapioca

1 16oz. can tomatoes, cut up

1 15oz. can garbanzo beans (or chick peas), drained

1 cup beef broth


  • Cut sausage in half lengthwise; cut into 1" thick slices.  In crock pot combine sausage pieces, sweet potatoes, green pepper, celery, onion, and tapioca.  Add undrained tomatoes, garbanzo beans, and beef broth.
  • Cover; cook on low heat settings for 10 to 12 hours or on high setting for 4 1/2 to 5 hours.  
  • Makes 4 servings.
